Who we are

Meet Chase Grimes

Born and raised in the Florida Keys, he grew up on the water, not just fishing and diving it, but mastering it.

A local fishing guide and mate, Chase has spent his life chasing big fish around the world, winning spearfishing competitions, and perfecting the craft of filleting since he was a child. What started as cleaning fish caught off the family’s dock as a kid, “grits and grunts” for breakfast, turned into years of hands-on experience with everything from yellowtail to trophy pelagics.

He knows how to find them, land them, and clean them.

At Florida Keys Fillet Co., you’re not handing your catch to someone who watched a YouTube video. You are trusting a lifelong waterman who was raised doing this the right way.

Meet Ricky Allen

Born and raised in the Florida Keys and a graduate of Marathon High School, Ricky is deeply rooted in a commercial fishing family and saltwater tradition.

He grew up on the decks of working boats, learning firsthand what it takes to harvest fish, and spent long nights at the dockside cleaning tables. Fish handling is second nature.

He is very used to clean lines, minimal waste, and table-ready fillets due to his very picky fiancée’s standards, so bones don’t stand a chance.
